500g Erythritol

Erythritol is a great sugar substitute and is quite easy to work with. 

Typically, Erythritol is 70% as sweet as sugar however if you do use too much, it may cause crystallisation in some things you are trying to make, so it is much better to be used in high liquid products and recommend Melvia for less wetter recipes.
