Carrot cake is probably my one weekness at a bakery so it was one of the first things I converted when I took on the Keto life.
Our carrot cake is light yet moist, strong in carrot cake flavour and topped with the perfect cream cheesy tang of a buttercream. It's exactly what you want in a carrot cake really.
This carrot cake tastes it's best at room temperature and can be cut into 8 serves.
